2 tablespoons coconut chunks
1 tablespoon white chocolate chips
1 ½ cups unsweetened coconut milk, divided
4 ounces frozen strawberries
4 ounces frozen pineapple
Optional: 1 tablespoon turbinado sugar
Garnish: fresh strawberry slices, shredded coconut flakes
1. Add the coconut chunks, white chocolate chips, and 1 cup coconut milk to a blender.
2. Blend on high until smooth.
3. Add the frozen strawberries, pineapple, and sugar (if using), then blend again.
4. Adjust consistency with the remaining milk as needed.
5. Pour into a glass, garnish, and serve immediately.
For a colder, thicker smoothie, freeze the coconut milk into cubes beforehand. Use a high-powered blender for the smoothest texture.
